- 1 head (about 3 cups) cauliflower
- 2 oz cream cheese
- 1 teaspoon salt
- Cut cauliflower head into chunks
- Boil cauliflower about 25 minutes
- Drain into a colander and mash until the water is out of it.
- Using an electric mixer, mix. for about 30 seconds.
- Add cream cheese, and salt.
- Mix until smooth.
